In this study, chitosan coatings incorporated with propolis extract (PE) were utilized to extend the shelf-life of refrigerated Nemipterus japonicus fillets. Microbiological (total mesophilic bacteria (TMB) and total psychrotrophic count (TPC)), physicochemical (pH, total volatile bases nitrogen (TVB-N), 2-thiobarbituric acid reactive substances (TBARS), free fatty acid (FFA)) and sensory (color, odor and preference) characteristics of coated fillets were evaluated during 12 days. The results showed that incorporating PE into chitosan solution could significantly (P < 0.05) improve the quality of fish fillets. The results showed that the chitosan+PE samples reduced the extent of lipid oxidation, as judged by TBARS and FFA, suggesting that there is a synergistic effect between chitosan coating and propolis. Moreover, the application of chitosan coatings with PE improved the TVB-N and pH values of the Nemipterus japonicus samples significantly compared to untreated sample, thus extending the shelf life of Nemipterus japonicus fillet approximately >10 days. All wrapped fillets in treatment samples incorporated with PE had lower bacterial counts compared to control (P < 0.05). However, the bacterial counts of chitosan coating combined with PE were lower than those treated by chitosan or PE alone during the storage. The fillets treated with chitosan and PE had the best sensory properties. The increase (>10 days) in the shelf-life was attributed to the antioxidant and antimicrobial characteristics of chitosan and PE. These results confirmed that chitosan coating enriched with PE can be an improving method to reducing deterioration of refrigerated Nemipterus japonicus fillets. (C) 2019 Published by Elsevier B.V.

Summary: Carotenoprotein extracted from Pacific white shrimp processing waste using alcalase and pepsin showed high protein and carotenoid content, with essential amino acids and dominant non-essential amino acids. The extracted samples also contained high amounts of mono and polyunsaturated fatty acids, with differences in fatty acid compositions between alcalase and pepsin extracted samples. Mineral content was significant in the extracted samples, with higher levels of certain minerals in alcalase-extracted samples. The results suggest that carotenoprotein from processing residue of Pacific white shrimp can be used as a valuable and nutritious food or feed powder.

Summary: This research investigated the concentration of heavy metals in the sediments, gill and muscle tissue of Siganus javus, Padina australis, and Sargassum vulgare collected from the Persian Gulf coasts of Bushehr province. The uptake of metals in the gill and muscle tissue followed the trend Cu > Ni > Pb. The study also calculated the estimated daily intake, estimated weekly intake, allowable fish consumption rate limit, and target hazard quotients for the consumption of this fish. The concentration of heavy metals in the edible parts of the fish did not exceed the permissible limits proposed by relevant authorities, but the Ni concentration was higher than standard. The consumer risk indexes for non-cancerous diseases were lower than standard.

Effects of aging and diabetes on the deformation mechanisms and molecular structural characteristics of collagen fibrils under daily activity

Wei-Han Hui, Yen-Lin Chen, Shu-Wei Chang

Summary: Crosslinking affects the mechanical behavior and tissue metabolism of collagen-based tissues. Aging and diabetes alter the crosslinking type and density, thus changing tissue properties. High-connectivity enzymatic crosslinking and advanced-glycation end-products result in uniform deformation under daily activity, while low-connectivity enzymatic crosslinking does not. High-connectivity model displays more sliding, while AGEs induce instability in structures near the binding sites.
