Summary: This study investigates the photodegradation of the flavoring compound Furaneol (FUR) in the presence of vitamin B-2 (Riboflavin, Rf) in aqueous and microheterogeneous media. The results show that in a solution of Rf plus FUR, a complex mechanism of competitive reactions occurs, and the oxidation rates of FUR are higher in the microheterogeneous medium. The study demonstrates that visible-light exposure of formulations containing Rf and FUR may lead to significant oxidation of the flavoring agent.

Summary: In this study, beta-mannanase was immobilized on calcium alginate, which showed better thermal and pH stability and lower substrate affinity compared to free enzyme. The immobilized enzyme could be reused multiple times and maintained activity even after 30 days of storage. A significant amount of MOSs with high concentration of mannobiose and mannotriose were produced. This immobilization strategy has great potential in the production of mannan oligosaccharides.

Summary: Oral administration of GGGM led to compromised growth performance, increased relative weight of spleen and epididymal fat, and elevated alpha 1-acid glycoprotein content in both serum and livers of mice. Additionally, GGGM treatment resulted in increased activities of intestinal lactic dehydrogenase and succinic dehydrogenase, as well as increased consumption of reducing sugar by intestinal epithelial cells and reduced cell viability. Intestinal inflammatory responses were triggered by GGGM treatment, as evidenced by increased expression of inflammatory cytokines TNF-alpha and IL-6 in both in vivo and in vitro experiments.

Summary: The study showed that the optimum beta-lactoglobulin/sodium alginate dry films have appropriate characteristics that are easy to handle, good tensile strength, and elongation values. Although the microstructure of the films was less homogeneous, there were no changes in the thermal properties of SA. Furthermore, the tertiary structure of beta-LG remained unchanged when dissolved in an aqueous environment, and exhibited similar binding properties to the native one after dissolution.

Summary: Crosslinking affects the mechanical behavior and tissue metabolism of collagen-based tissues. Aging and diabetes alter the crosslinking type and density, thus changing tissue properties. High-connectivity enzymatic crosslinking and advanced-glycation end-products result in uniform deformation under daily activity, while low-connectivity enzymatic crosslinking does not. High-connectivity model displays more sliding, while AGEs induce instability in structures near the binding sites.

Summary: The potential of multi-layer nanoemulsions for improving the cellular uptake, antioxidant activity, and in vitro bioaccessibility of alpha-tocopherol was examined. The results showed that the multi-layer nanoemulsions significantly enhanced the cellular uptake and antioxidant activity of alpha-tocopherol compared to free coumarin 6. Furthermore, the use of chitosan and dextran sulfate as wall materials in the multi-layer nanoemulsions led to even higher cellular uptake, in vitro bioaccessibility, and antioxidant activity of alpha-tocopherol.
