Alternative protein sources are required to meet the demand for fishmeal-free feed in the aquaculture industry. We assessed rapeseed press cake (RPC) as fishmeal replacement, including the effect of rapeseed peel (RP), by testing its effect on extruder response and the physical quality of feed pellets. Eight rainbow trout (Oncorhynchus mykiss W.) feed formulations were extruded containing 0, 8, 16, 24 or 32 g/100 g RPC or 4, 11 or 14 g/100 g RP. We varied the extrusion temperature (90-110 degrees C) and screw speed (200-400 rpm) and monitored the pellet quality (expansion indices, bulk density, sinking velocity, specific hardness, water stability and durability) and extrusion process parameters (pressure at the die, SME, product temperature and torque). The pellet quality was affected by the feed formulation. Formulations with high RPC/RP contents increased the extrusion die pressure and caused greater longitudinal expansion, but simultaneously reduced the sectional expansion, bulk density, sinking velocity and specific hardness compared to the reference feed. Although RPC or RP reduced the pellet quality, low concentrations were compatible with functional pellets and can be included in fish feed as an alternative protein source.

Melt Emulsions: Influence of the Cooling Procedure on Crystallization and Recrystallization of Emulsion Droplets and their Influence on Dispersion Viscosity upon Storage

Jasmin Reiner, Tran T. Ly, Lingyue Liu, Heike P. Karbstein

Summary: Emulsions with crystalline dispersed phase are commonly used in life sciences, but they are often unstable and their rheological behavior can change. These changes are possibly due to shape transformations of the crystallized droplets, which depend on the cooling rate during production and storage temperature.

Coalescence of Inner Water Droplets in Double Emulsions Due to Surfactant Transport through Oil

Nico Leister, Daniel Pfaff, Heike Petra Karbstein

Summary: This study focuses on stability issues in water-in-oil-in-water double emulsions caused by the transport of hydrophilic surfactants through the lipophilic phase to the inner water droplets. A model system was developed to analyze the effects of surfactant transport on the coalescence of inner water droplets, demonstrating changes in stability for different surfactants compared to single emulsions and corresponding double emulsions.

Effect of Conformation of Sugar Beet Pectin on the Interfacial and Emulsifying Properties

Benjamin Bindereif, Heike Petra Karbstein, Katharina Zahn, Ulrike Sabine van der Schaaf

Summary: The influence of the conformation of sugar beet pectin on its interfacial and emulsifying properties was investigated. The results showed that the compactness of the conformation affects the reduction rate of interfacial tension, adsorbed mass, and layer thickness. The required concentration of pectin for stabilizing oil droplets at specific pH conditions is also affected by the conformation.

Summary: Sugar beet pectins (SBPs) are known for their emulsifying properties, and the arabinose content has a decisive influence on their functionality. In this study, the molecular structure and emulsifying properties of selectively modified SBPs were analyzed. The results showed that both higher portions and chain lengths of arabinans positively influence the emulsifying properties of SBPs.

A comprehensive methodology to study double emulsion stability

Nico Leister, Vanessa Goetz, Stephan Jan Bachmann, Stephanie Nachtigall, Saman Hosseinpour, Wolfgang Peukert, Heike Karbstein

Summary: The stability of double emulsions depends on the rapid formation of viscoelastic interfaces between water and oil phases. Cooperative adsorption of hydrophilic and lipophilic surfactants and its impact on the properties of water/oil/water interfacial films were studied to replace empirical methodologies in designing double emulsion systems. Experiments and simulations were conducted to investigate surfactant distribution, stability against coalescence, and surfactant conformation at the interface. It was found that the competitive adsorption of sodium dodecyl sulfate and lipophilic surfactant resulted in improved encapsulation efficiency, interface elasticity, and resistance against coalescence.

Influence of the Triglyceride Composition, Surfactant Concentration and Time-Temperature Conditions on the Particle Morphology in Dispersions

Jasmin Reiner, Desiree Martin, Franziska Ott, Leon Harnisch, Volker Gaukel, Heike Petra Karbstein

Summary: There are many applications for crystalline triglyceride-in-water dispersions in the life sciences and pharmaceutical industries. The particle morphology and size distribution are the main factors influencing the properties of these dispersions. In this study, the influence of the dispersed-phase composition on the crystallization and melting behavior of these systems was investigated. Different particle morphologies were obtained by varying the dispersed-phase composition, and smaller droplets were obtained after melting. The self-emulsification and coalescence events were influenced by the melting range of the fat and the surfactant concentration.

Diet-egg relationships and equilibration of fatty acids in eggs of southern flounder, Paralichthys lethostigma

Hunter S. Bailey, Ashley N. Fincannon, Lee A. Fuiman

Summary: This study investigated the transfer of fatty acids from broodstock diets to eggs and the time needed for the eggs to equilibrate to the diet in Southern flounder. The findings indicate that different diet treatments significantly affect the fatty acid composition of eggs, and it takes 8-16 weeks for the eggs to adapt to changes in the adult diet. These results are important for improving broodstock diets and feeding protocols in stock-enhancement programs.
