Nutrient Properties and Nuclear Magnetic Resonance-Based Metabonomic Analysis of Macrofungi

Many delicious and nutritional macrofungi are widely distributed and used in East Asian regions, considered as edible and medicinal foods. In this study, 11 species of dried and fresh, edible and medicinal macrofungi, Ganoderma amboinense, Agaricus subrufescens, Dictyophora indusiata, Pleurotus sajor-caju, Pleurotus ostreatus, Pleurotus geesteranu, Hericium erinaceus, Stropharia rugosoannulata, Pleurotus sapidus, Antrodia camphorata, and Lentinus edodes (Berk.) Sing, were investigated to determine the content of their nutritional components, including proteins, fat, carbohydrates, trace minerals, coarse cellulose, vitamins, and amino acids. The amino acid patterns and similarity of macrofungi were distinguished through principal component analysis and hierarchical cluster analyses, respectively. A total of 103 metabolic small molecules of macrofungi were identified by nuclear magnetic resonance spectroscopy and were aggregated by heatmap. Moreover, the macrofungi were classified by principal component analysis based on these metabolites. The results show that carbohydrates and proteins are two main components, as well as the nutritional ingredients, that differ among various species and varied between fresh and dried macrofungi. The amino acid patterns in L. edodes and A. subrufescens were different compared with that of the other tested mushrooms.

Fat substitutes have various functions in food processing and pose fewer health risks compared to conventional fats.

A 3D co-culture intestinal organoid system for exploring glucose metabolism

Summary: This review introduces a 3D co-culture intestinal organoid system developed from stem cells, which can simulate human tissues and be used for studying glucose metabolism diseases and drug screening. The gut has been identified as an important site for studying the interactions among glucose metabolism, gut microbial metabolism, and gut microbiota. The construction methods and progress of 3D intestinal organoid systems compared to traditional 2D culture methods are also summarized in the manuscript.

Synthesis of bioactive oligosaccharides and their potential health benefits

Summary: Oligosaccharides, with various physiological activities, are being widely used in food and medical fields. Due to limited natural resources, there is a need to study un-natural oligosaccharides for their potential benefits. Different artificial strategies have been used to develop various oligosaccharides, with a focus on their effects against diabetes, obesity, aging, virus, and gut microbiota. Multi-omics approaches can be applied to study the dynamic changes of oligosaccharides and their effects on different diseases.

This paper focuses on the metabolism of phytochemicals in the colon and their effects on the gut microbiota. Phytochemicals can be absorbed through enzymes produced by intestinal cells and stem cells, as well as through interactions with the intestinal flora, which can help improve associated diseases.

Bioactive peptides have wide potential applications in medicine and food, and the regulation of lipid metabolism disorders by bioactive peptides from different sources provides a reference for the development and research of lipid-reducing bioactive peptides.

Honeybee as a food nutrition analysis model of neural development and gut microbiota

Summary: Research on the relationship between gut microbiota and animal neurophysiology and behavior has grown rapidly recently. Swarming insects, like honeybees, are suitable models for investigating the molecular mechanisms that control insect behavior. The honeybee gut bacteria model is established quickly and has a higher flux, making it useful for understanding intestinal diseases and finding molecular therapeutic targets. This review focused on the contributions of the honeybee model in learning cognition and microbiome research, particularly on the correlation between gut microbiota and brain development.

The Potential Hypoglycemic Competence of Low Molecular Weight Polysaccharides Obtained from Laminaria japonica

Summary: This study evaluated the hypoglycemic effects of low molecular weight polysaccharides fractions from Laminaria japonica (LJOO) on mice with T2DM. The results showed that LJOO decreased FBG and insulin concentrations, altered the gut microbiota composition, increased the population of beneficial bacteria, and decreased the population of harmful bacteria. Additionally, LJOO stimulated the growth of SCFA-producing bacteria, resulting in increased SCFAs levels.

Screening and Metabolomic Analysis of Lactic Acid Bacteria-Antagonizing Pseudomonas aeruginosa

Summary: This study screened lactic acid bacteria (LAB) with strong antagonistic ability against Pseudomonas aeruginosa (P. aeruginosa) and evaluated the regulatory mechanism of LAB against P. aeruginosa. The results showed that the selected LAB strains inhibited the growth, biofilm formation, and pyocyanin expression of P. aeruginosa, and promoted the expression of autoinducer-2. Lactipantibacillus plantarum (Lp. plantarum) LPyang affected the metabolic processes of P. aeruginosa by influencing metabolic substances, such as LysoPC, oxidized glutathione, betaine, etc. These findings provide new insights into the antagonistic activity of Lp. plantarum LPyang against P. aeruginosa.

Recent advances of natural pigments from algae

Summary: Pigment is a significant food additive that greatly impacts the sensory aspect of food. Natural sources of healthy and non-toxic edible pigments are gaining attention. Algae serves as an important natural pigment source, containing chlorophyll, phycoerythrin, carotene, and other natural pigments. Apart from coloring, pigments also have powerful physiological activities like antioxidants, anti-inflammatory, anti-obesity, and lipid-lowering properties. This review focuses on three pigments found in seaweed, presenting their main structural properties and functions, bridging the gap in pigment reviews with seaweed as the main focus. The research in this review provides a basis for the development of new health foods and offers new directions for the use of seaweed chlorophyll in the food and pharmaceutical industries.

Strategies for synthesizing human milk lacto-N-fucopentaoses oligosaccharides

Summary: Lacto-N-fucopentaoses (LNFPs) are important components of human milk oligosaccharides (HMOs) and have various functional activities. Chemical and enzymatic synthesis are two commonly used methods to produce LNFPs, with enzymatic synthesis offering advantages such as mild reaction conditions and high yield. However, few studies have explored the use of in vivo fermentation for LNFPs production, despite its cost advantage. This paper aims to review the synthesis methods, functional activities, and emerging trends in the development of LNFPs.

Saccharomyces cerevisiae: a patulin degradation candidate both in vitro and in vivo

Summary: In this study, Saccharomyces cerevisiae KD was used to efficiently degrade patulin and alleviate the biotoxicity caused by patulin. The results showed that Saccharomyces cerevisiae KD could effectively degrade patulin, reduce oxidative stress and intestinal damage. Furthermore, Saccharomyces cerevisiae KD could regulate gene expression levels to control the ROS level and GSH content, thus decreasing intestinal damage.
