Glucose- and Lipid-Related Biomarkers Are Affected in Healthy Obese or Hyperglycemic Adults Consuming a Whole-Grain Pasta Enriched in Prebiotics and Probiotics: A 12-Week Randomized Controlled Trial

Background: Synbiotic foods, which combine the action of prebiotics and probiotics along the gastrointestinal tract, can affect inflammatory and glucose-related markers. Objective: The aim of this study was to investigate the effects on inflammatory and glycemia-related markers of a whole-grain pasta containing barley beta-glucans and Bacillus coagulans BC30, 6086 in healthy overweight or obese volunteers. Methods: A single-blind, parallel, randomized, placebo-controlled dietary intervention study was carried out. Forty-one healthy sedentary overweight (body mass index [BMI] 25-29.9 kg/m(2)) and obese (BMI >= 30) volunteers, aged 30-65 y and low consumers of fruit and vegetables, ate 1 serving/d of whole-grain control (CTR) or innovative (INN) pasta for 12 wk and maintained their habitual diets. Biological samples were collected at baseline and every 4 wk for primary (plasma high-sensitivity C-reactive protein [hs-CRP] and fasting plasma lipid profile) and secondary outcomes (glycemia-related markers, blood pressure, fecal microbiota composition, and body weight). Between (CTR compared with INN) and within (among weeks) group differences were tested for the whole population and for subgroups stratified by baseline values of BMI (>= 30) and glycemia (>= 100 mg/dL). Results: INN or CTR pasta consumption had no effect on primary and secondary outcomes over time, except for a significant increase in plasma gamma-glutamyltransferase (GGT) after 12wk of CTR pasta consumption. Comparisons between intervention groups revealed differences only at 12 wk: plasma GGT was higher in the CTR group; plasma hs-CRP, plasma LDL/HDL cholesterol ratio, and Bifidobacterium spp. were lower in the INN subgroup of obese volunteers; plasma resistin was lower and Faecalibacterium prausnitzii abundance was higher in the INN subgroup of hyperglycemic volunteers. Conclusions: A daily serving of a synbiotic whole-grain pasta had limited effects on primary and secondary outcomes in the entire group of volunteers but affected glycemia-and lipid-related markers and resistin in a subgroup of healthy obese or hyperglycemic volunteers.

Summary: This study examines the association between educational level and cancer incidence and finds that individuals with lower education have a higher risk of developing stomach, lung, kidney (in women), and bladder (in men) cancers, while having a lower risk of melanoma and breast cancer (in post-menopausal women). The study also suggests that specific lifestyle behaviors may explain part of this association.

Enrichment of tomato sauce and chopped tomatoes with tomato by-products increases antioxidant activity upon in vitro digestion

Summary: This study aimed to reutilize tomato pomace, a by-product of the tomato-processing industry, in the development of tomato sauce and assess its nutritional content and bioaccessibility. The innovative tomato sauce products showed higher levels of carotenoids, α-tocopherol, and total antioxidant capacity (TAC) compared to traditional sauce. Bioaccessibility of carotenoids and α-tocopherol varied among the different tomato sauce formulations, while total polyphenols content was higher in the sauce with 100% tomato pomace.

Processing and Nutritional Quality of Breakfast Cereals Sold in Italy: Results from the Food Labelling of Italian Products (FLIP) Study

Variability of Nutritional, Antioxidant, and Textural Traits of a Collection of Snap Beans of Different Colors

Summary: A study characterized 54 snap bean lines grown under organic farming for various traits and grouped them based on pod cross-section shape and color. Significant differences were observed among lines and groups for all the investigated traits. The phenolic composition and antioxidant activity of selected lines with contrasting firmness and belonging to different color groups were investigated, revealing a general decrease in some compounds after cooking. The study provides useful information for designing specific varieties for different markets and purposes.

Milk protein digestion and the gut microbiome influence gastrointestinal discomfort after cow milk consumption in healthy subjects

Summary: Despite not being lactose intolerant, many healthy individuals experience gastrointestinal discomfort after consuming milk. This study aimed to explore the digestion of milk protein and related physiological responses in individuals reporting gastrointestinal discomfort. The findings revealed that these individuals had slower milk protein digestion, lower hormone responses, and higher serum DPPIV activity compared to individuals without gastrointestinal discomfort.

Effect of Genotype, Year, and Their Interaction on the Accumulation of Bioactive Compounds and the Antioxidant Activity in Industrial Hemp (Cannabis sativa L.) Inflorescences

Summary: This study evaluated the phytochemical content and antioxidant activity in the inflorescences of six industrial hemp genotypes. The results showed that genotype, cropping year, and their interaction significantly affected the measured traits, with cropping year being the main source of variation. The dioecious genotypes demonstrated more consistent performance over the three years, with Fibrante showing the highest and most stable phytochemical content. Conversely, Santhica 27 had the lowest accumulation of phytochemicals, except for cannabigerol, which was found at its highest level in this genotype. These findings can guide breeders in selecting new hemp genotypes with improved phytochemical levels in their inflorescences.

Potential antidiabetic effect of muffins formulated with different protein hydrolysates: Role of bioactive peptides formed during digestion

Summary: This study aimed to evaluate the effects of incorporating protein hydrolysates in a conventional muffin on glycemic index (GI) and release of bioactive peptides (BAPs) during digestion. Results showed that muffins with hydrolyzed pea and rice proteins significantly reduced GI and released BAPs, while high concentration of casein hydrolysate increased GI and delivered opioid and DPPIV-inhibitor BAPs.

Nutrikinetics and urinary excretion of phenolic compounds after a 16-week supplementation with a flavanone-rich ingredient

This suggests that chronic intake may not offer the same bioavailability as acute intake.

Casein-phenol interactions occur during digestion and affect bioactive peptide and phenol bioaccessibility

Summary: This study explored the interactions between casein and different phenol compounds during digestion, and monitored their effects on the bioaccessibility of phenol compounds and bioactive peptides. The results showed that co-digestion of casein with phenol compounds increased the bioaccessible total antioxidant capacity and promoted the release of antioxidant peptides. Furthermore, the type and concentration of phenols affected the release of bioactive peptides.
