Summary: Lentinus edodes, commonly known as shiitake mushroom, is a widely cultivated edible mushroom in East Asia with rich bioactive polysaccharides, especially beta-glucans. Research on the polysaccharides from L. edodes has shown various remarkable biological activities such as antioxidant, anti-tumor, and immunomodulatory effects, drawing attention from scholars worldwide. Recent studies on the isolation methods, structural features, bioactivities, and mechanisms of L. edodes polysaccharides provide valuable research insights for their further application as therapeutic agents and functional foods.

Summary: In this study, fractions of beta-glucan with different molecular weights were isolated from Lentinus edodes and used for the treatment of colorectal cancer. The beta-glucan fractions inhibited colon cancer cell proliferation, induced apoptosis, and reduced inflammation in vitro. In an in vivo mouse model, the lower-molecular weight beta-glucan fraction showed stronger anti-inflammatory and anti-colon cancer activities by regulating gut microbiota and reconstructing intestinal barrier.

Summary: This study evaluated the hypoglycemic effect of a novel polysaccharide from Lentinus edodes, named LNT-1, on mice with type 2 diabetes. The results showed that LNT-1 treatment improved the damage in diabetic mice, possibly by activating the Nrf2/HO-1 pathway. Metabolomics analysis also identified several metabolic pathways related to the occurrence of diabetes.

Summary: The high beta-glucan content in barley disrupts the gluten network in dough. The study used various techniques to investigate the impact of beta-glucan on the quality of the gluten network structure. The results showed that the physical hindrance of the beta-glucan gel destroyed the formation of the gluten network structure and affected the secondary structure of gluten protein.

Summary: The study investigated the interaction mechanism between Lentinus edodes mycelia polysaccharide (LMP) and bovine lactoferrin (BLF), and found that the complex can alleviate apoptosis and inhibit oxidative stress in cells via MAPK pathways. Additionally, the complex was able to promote glucose uptake in cells, showing potential applications in the foods field.

Summary: The study found that both short-term and long-term supplementation of L. edodes beta-glucan prevented gut microbial composition shifts induced by a high-fat diet. Long-term supplementation also prevented cognitive impairments induced by the high-fat diet, improved synaptic ultrastructure, reduced neuroinflammation, and ameliorated brain-derived neurotrophic factor deficits in the prefrontal cortex and hippocampus. Additionally, beta-glucan supplementation increased mucosal thickness, upregulated tight junction protein expression, decreased plasma LPS levels, and inhibited proinflammatory macrophage accumulation in the colon of high-fat diet-fed mice.

Summary: The study identified EC and BG in highland barley grain as active compounds that modulate glucose metabolism and have anti-hyperglycemic effects. When combined, they show synergistic effects on the Akt pathway, improving glucose uptake and glycogen synthesis while inhibiting gluconeogenesis. These findings support the use of whole highland barley grain diet for diabetes prevention and potential development of EC and BG as new dietary supplements.

Summary: The effect of oxyresveratrol on postharvest quality and membrane lipid metabolism of shiitake mushroom was investigated. Oxyresveratrol retarded browning, maintained firmness and alleviated occurrence of decay of shiitake mushroom. The oxidation and hydrolysis of membrane phospholipids were suppressed by oxyresveratrol treatment, which was associated with reduced LOX and PLD activities and increased SOD and CAT activities.
