Anthocyanin fingerprinting of true bokbunja (Rubus coreanus Miq.) fruit

The interest in black raspberry products has been increasing due to its flavor and potential health benefits. While black raspberries grown in North America are Rubus occidentalis, there has been some confusion regarding the identity of black raspberry grown in Korea (known as bokbunja; Rubus coreanus). As such, there is a need to define the anthocyanin profile of R. coreanus fruit collected from a verified source. We analyzed three genotypes of bokbunja fruit for anthocyanin profiles. While each varied in its anthocyanin proportions and total concentration, bokbunja fruit contained three anthocyanins: cyanidin-3-glucoside, cyanidin-3-rutinoside, and pelargonidin-3-glucoside, and lacked the xylose containing glycosides characteristic of R. occidentalis: cyanidin-3-sambubioside, and cyanidin-3-xylosylrutinoside. Due to mix-ups of bokbunja identity, research claiming to be conducted on bokbunja fruit requires confirmation that the fruit was sourced from a correctly identified plant. The distinct anthocyanin profiles between the two species can be used to confirm plant identity. Published by Elsevier Ltd.

Improving the chemical and sensory characteristics of red and white wines with pectinase-producing non-Saccharomyces yeasts

Summary: This study examined the influence of pectinase-producing non-Saccharomyces yeasts on the chemical and sensory attributes of red and white wines with added pectin. The presence of non-Saccharomyces yeasts and pectin addition significantly affected pH, titratable acidity, and concentrations of D-galacturonic acid. Limited sensory differences were observed, but a positive correlation was found between D-galacturonic acid and buttery aroma for Chardonnay and with flavor for Merlot. Utilizing these particular non-Saccharomyces yeasts can improve wine quality without any faults.

Sensory properties of 6-and 18-month-stored wines made with pectinase-producing non-Saccharomyces yeasts

Summary: Recently, there has been an increase in the use and availability of non-Saccharomyces yeasts (NSY) in winemaking for alcohol reduction. However, limited research has been conducted on the impact of these yeasts on the sensory quality of wine, particularly during storage. This study aimed to characterize the sensory profiles of Merlot and Chardonnay wines made with pectinase-producing NSY and added pectin. The results showed that the addition of NSY with pectin resulted in higher concentrations of certain compounds in the wines after aging, and the sensory attributes of the wines were influenced by the yeast, pectin addition, and aging time.

Grapevine Endophyte Endornavirus and Two New Endornaviruses Found Associated with Grapevines (Vitis vinifera L.) in Idaho, USA

Summary: Through high-throughput sequencing analysis of total RNA samples from wine grape cultivars in Idaho, five virus genomes of endornaviruses were identified. One of them was a local isolate of grapevine endophyte endornavirus (GEEV), while the other four represented two novel endornaviruses named grapevine endornavirus 1 (GEV1) and grapevine endornavirus 2 (GEV2). The genomes of all three viruses contained a single open reading frame encoding polyproteins with identifiable helicase (HEL) and RNA-dependent RNA polymerase (RdRP) domains, while GEV2 also had a glycosyltransferase domain.

Genome Sequences of Two Grapevine Rupestris Stem Pitting-Associated Virus Variants from Vitis vinifera cv. Riesling in Idaho, USA

Summary: We report the genome sequences of two genetic variants of grapevine rupestris stem pitting-associated virus (GRSPaV) from Idaho, USA. The coding-complete, positive-strand RNA genome of 8,700 nucleotides contains six open reading frames characteristic of foveaviruses. The two Idaho genetic variants belong to GRSPaV phylogroup 1.

Idaho 'Cabernet Sauvignon' grape composition altered by grapevine leafroll-associated virus 3

Summary: This study is the first to investigate the impact of grapevine leafroll-associated virus 3 (GLRaV-3) infected vines on the quality of 'Cabernet Sauvignon' grapes grown in Idaho. Over three growing seasons, a single block of plants, consisting of healthy and GLRaV-3 infected vines, was examined. Grapes from infected vines showed significantly higher concentrations of total organic acids and significantly lower levels of anthocyanins, phenolics, tannins, and free amino acids compared to healthy vines. These findings indicate a negative impact of GLRaV-3 infection on important quality elements of Idaho 'Cabernet Sauvignon' grapes for wine production.
