Background. Evidence has shown that long-chain polyunsaturated fatty acids (LCPUFA), especially the omega-3 fatty acids such as eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) are beneficial for bone health and turnover. Objectives. This review summarizes findings from both in vivo and in vitro studies and the effects of LC PUFA on bone metabolism, as well as the relationship with the oxidative stress, the inflammatory process, and obesity. Results. Some studies in humans indicate that LCPUFA can increase bone formation, affect peak bone mass in adolescents, and reduce bone loss. However, the cellular mechanisms of action of the LCPUFA are complex and involve modulation of fatty acid metabolites such as prostaglandins, resolvins and protectins, several signaling pathways, cytokines, and growth factors, although in certain aspects there is still some controversy. LCPUFA affect receptor activator of nuclear factor kappa beta (RANK), a receptor found on the osteoclast, causing bone resorption, which controls osteoclast formation. Conclusions. Since fatty acids are an endogenous source of reactive oxygen species, free radicals alter the process of bone turnover; however, although there are clinical evidences linking bone metabolism and dietary lipids, more clinical trials are necessary to prove whether omega-3 PUFA supplementation plays a major role in bone health.

Implications of Vitamins in COVID-19 Prevention and Treatment through Immunomodulatory and Anti-Oxidative Mechanisms

Juan M. Toledano, Jorge Moreno-Fernandez, Maria Puche-Juarez, Julio J. Ochoa, Javier Diaz-Castro

Summary: Since the emergence of COVID-19, finding preventive and therapeutic options has become a priority. The approval of vaccines is crucial, but there is still a need to study alternative methods to support the immune system. Adequate nutrition and vitamin intake can improve immune response and prevent infection.

Different Effects of Low Selenite and Selenium-Nanoparticle Supplementation on Adipose Tissue Function and Insulin Secretion in Adolescent Male Rats

Maria Luisa Ojeda, Fatima Nogales, Olimpia Carreras, Eloisa Pajuelo, Maria Del Carmen Gallego-Lopez, Ines Romero-Herrera, Belen Begines, Jorge Moreno-Fernandez, Javier Diaz-Castro, Ana Alcudia

Summary: This study investigates the effects of low-dose selenite and Se nanoparticles on adipose tissue deposition and insulin secretion in adolescent rats. The results show that low selenite supplementation promotes adipogenesis, while Se nanoparticle administration prevents fat depots and inflammation.

Content and Availability of Minerals in Plant-Based Burgers Compared with a Meat Burger

Gladys O. Latunde-Dada, Naroa Kajarabille, Sophie Rose, Sarah M. Arafsha, Tugba Kose, Mohamad F. Aslam, Wendy L. Hall, Paul A. Sharp

Summary: With the increasing popularity of plant-based diets, there is a growing interest in evaluating the nutritional value of meat substitutes. Understanding the mineral content and absorption of these products is crucial as plant-based eating becomes more common. This study aimed to analyze the mineral composition and uptake of plant-based meat-free burgers compared to a typical beef burger.

Summary: This study aimed to evaluate the potential positive effects of ubiquinol supplementation on muscle aggression, physical performance, and fatigue perception in non-elite athletes after high intensity circuit weight training. The results showed that ubiquinol supplementation improved muscle performance, reduced muscle damage markers, and had a protective effect on muscle fibers.

Antioxidant and Immune-Related Implications of Minerals in COVID-19: A Possibility for Disease Prevention and Management

Juan M. Toledano, Maria Puche-Juarez, Jorge Moreno-Fernandez, Julio J. Ochoa, Javier Diaz-Castro

Summary: Since the COVID-19 pandemic is ongoing, exploring strategies to support the immune system during infection is necessary. An adequate diet can improve immune responses, and minerals, which have immune-modulatory and antioxidant activities, might be useful in fighting this illness. Although more research is needed, evidence from studies on respiratory diseases suggests the rationality of investigating the use of minerals during this pandemic.

Influence of Adipose Tissue on Early Metabolic Programming: Conditioning Factors and Early Screening

Maria Puche-Juarez, Juan M. Toledano, Julio J. Ochoa, Javier Diaz-Castro, Jorge Moreno-Fernandez

Summary: Background: Obesity and being overweight have become severe global health issues. Maternal dietary habits and other factors during pregnancy can have a significant impact on the prevention of obesity in children. A review of recent human studies aims to determine modifiable factors that influence adiposity and prevent specific disorders later in life. Conclusion: A healthy diet and lifestyle starting from pregnancy and throughout childhood, particularly in the first two years, can prevent the emergence of noncommunicable diseases and metabolic syndrome-related pathologies.

The Role of Endocrine Disrupting Chemicals in Gestation and Pregnancy Outcomes

Maria Puche-Juarez, Juan M. Toledano, Jorge Moreno-Fernandez, Yolanda Galvez-Ontiveros, Ana Rivas, Javier Diaz-Castro, Julio J. Ochoa

Summary: Endocrine disrupting chemicals (EDCs) are exogenous substances that can interfere with the regulation and function of the endocrine system, potentially causing serious health effects, especially on pregnant women and fetuses. It is important to conduct further research on the health issues caused by these substances and implement preventive measures.

Adipose tissue homeostasis orchestrates the oxidative, energetic, metabolic and endocrine disruption induced by binge drinking in adolescent rats

Ines Romero-Herrera, Fatima Nogales, Maria del Carmen Gallego-Lopez, Javier Diaz-Castro, Jorge Moreno-Fernandez, Julio Jose Ochoa, Olimpia Carreras, Ma Luisa Ojeda

Summary: This study analyzed the effects of binge drinking on white adipose tissue in adolescent rats. The results showed that binge drinking led to oxidative imbalance and insulin resistance, altering the energy balance in the adipose tissue and affecting adipokine secretion, contributing to the development of metabolic and endocrine disruption.
