Summary: Gelled emulsions (GE) used as animal fat replacers in Bologna sausages resulted in reduced fat content, increased hardness, and higher lipid oxidation rates. Consumer tests indicated that the reformulated sausages were acceptable, but CATA tests revealed issues with the sensory properties of sausages with partial or total pork fat replaced with GE.

Transport properties of n-ethylene glycol aqueous solutions with focus on triethylene glycol-water

Summary: The Soret effect and diffusion in TEG-water mixtures were investigated using optical digital interferometry. The results showed that all coefficients, including diffusion, thermal diffusion, and Soret coefficients, decreased with increasing concentrations of TEG and n-EG. The change of sign in the Soret coefficient was directly related to the hydrogen bonding ability of the n-EG molecule with water. The diffusion and thermal diffusion coefficients exhibited a plateau behavior, indicating changes in preferential interactions in aqueous solutions with concentration.

Summary: The study aimed to analyze the oil content and fatty acids of Brassica seeds using portable Near Infrared spectroscopy (NIRS) and NIR-Hyperspectral Imaging (NIR-HSI), as well as classify seed species. Results showed that prediction models based on NIR-HSI spectra were superior and could effectively differentiate between different varieties of Brassica seeds.

Summary: This manuscript presents a new fuzzy approach applied to Model Predictive Control (MPC). The first contribution of this work is a modification in the Takagi-Sugeno-Kang (TSK) structure that allows modeling IF-THEN rules without approximation. The second contribution is a new MPC formulation that guarantees system stability by combining optimization, state-space model, and terminal constraints. These methods were implemented on a Programmable Logic Controller and applied to control a physical DC motor.

Increased risk of mortality from COVID-19 in people with obesity

Summary: This observational, retrospective, and analytical study aimed to analyze the risk of mortality from COVID-19 in people with obesity. The results showed that obese individuals with COVID-19 had a 26% higher risk of death compared to those without obesity. The highest mortality risks were found in obese individuals in the 11 to 60 age groups, while obese women aged 31 to 50 years and elderly women over 71 years had the lowest mortality risk compared to obese men.

Summary: Andean lupin concentrate is rich in nutrients, and when added to yoghurts, increases protein content and enhances unsaturated fatty acids, polyphenols, flavonoids, and antioxidant activity. Enriched yoghurts show improved physicochemical properties such as increased lactic acid content and reduced syneresis. This demonstrates that yoghurts enriched with lupin protein concentrate could be a beneficial option in promoting health and preventing chronic diseases.
