Summary: Flavonoids have gained increasing attention for their various health-promoting effects. Liquid chromatography-quadrupole time-of-flight tandem mass spectrometry (LC-Q-TOF-MS/MS) has become a widely used technique for detecting flavonoids, providing efficient separation and structural information. This review comprehensively summarizes the principles and methodologies of LC-Q-TOF-MS/MS for detecting flavonoids in food, including qualitative and quantitative determination. It also discusses recent applications in agricultural products, food processing, and in vivo metabolism, as well as suggesting technological improvements and potential applications.

Summary: The suitability of a capillary hydrophilic interaction chromatography (CapHILIC) -QTOF-MS system for non-targeted metabolomics was evaluated and compared with a narrow-bore hydrophilic interaction chromatography (HILIC) -QTOF-MS system. Both platforms detected a similar number of features and performed well in terms of retention time stability, analytical repeatability, and signal intensity. The use of CapHILIC increased the signal areas of all metabolites, though the signal-to-noise ratio was only improved for 50% of the metabolites. Further optimization of CapHILIC conditions improved reproducibility and signal intensity.

Summary: Aromatic and medicinal plants (AMPs) as herbal materials are often contaminated by various mycotoxin-producing fungi. This study investigated the co-occurrence of 15 mycotoxins in 40 AMP samples consumed in Morocco. Results showed that while multiple mycotoxins were present in the samples, the dietary exposure of mycotoxins through AMP beverages does not pose a risk to the population.

Summary: High-performance liquid chromatography, liquid chromatography-tandem mass spectrometry, and liquid chromatography-quadrupole time-of-flight mass spectrometry (LC-Q-TOF-MS) were used to detect and characterize banned synthetic colorants in cosmetics. A validated HPLC method was applied to 120 distributed cosmetic products, revealing the presence of three illegal synthetic colorants in one product. The fragmentation pattern of synthetic colorants was predicted based on their fragment ions obtained using LC-Q-TOF-MS.
