PUFA are bioactive nutrients thought to be effective in the prevention of many chronic diseases. PUFA susceptibility to free radical oxidation represents the other side of the coin, and the role of PUFA as pro- or anti-oxidants is still an unanswered question. In this study we supplemented HepG2 cells with different PUFA, and observed different effects on cytotoxicity, oxidation and modulation of antioxidant defenses. These were not simply related to the length of carbon chain, or to the number and position of double bonds. ARA supply evidenced the induction of oxidative damage, while DHA supplemented cells appeared richer in antioxidant defenses. To our knowledge, our study is the first evidencing the different pro- or anti-oxidant effect of different fatty acids when supplemented to cells. Overall, this points out the importance of not generalizing dietary recommendations considering PUFA as one category, but to extend them to the individual fatty acids. (C) 2011 Elsevier Ltd. Insight on Glucose and Fructose Absorption and Relevance in the Enterocyte Milieu

Elena Chiarello, Mattia Di Nunzio, Gianfranco Picone, Giorgia Antonelli, Francesco Capozzi, Alessandra Bordoni

Summary: This study examined the metabolism and absorption of glucose, fructose, and sucrose in enterocytes. The results suggest that fructose is taken up and catabolized more quickly than glucose, and the metabolism of these sugars differs in the cells. Further research is needed to confirm these findings and to explore specific transporters and enzymes involved in sugar metabolism.

Machine Olfaction to Evaluate the Stability of the Odor Profile of Pancakes Enriched with Docosahexaenoic Acid and Anthocyanins

George Bazar, Hajnalka Hingyi, Eva Csavajda, Csaba Palko, Haruna Gado Yakubu, Carlos Pineda-Vadillo, Didier Dupont, Francesco Capozzi, Alessandra Bordoni, Tamas Toth

Summary: This study used electronic sensor array technology to test pancakes enriched with docosahexaenoic acid and anthocyanins. The results showed a strong relation between the number of days that samples were stored and the odor describing sensor signals of enriched samples. The electronic nose technology proved to be applicable in the characterization of bioactive-enriched foods and useful in monitoring odor alterations during storage.

Dietary Polyphenols and In Vitro Intestinal Fructose Uptake and Transport: A Systematic Literature Review

Stefania Iametti, Francesco Bonomi, Mattia Di Nunzio

Summary: Recent evidence suggests that chronic consumption of large amounts of fructose is associated with several non-communicable diseases. Plant polyphenols have the potential to inhibit fructose uptake and transport, making them an important target for studying the effects on fructose metabolism. However, the lack of standardized conditions in current studies prevents definitive conclusions. Future research should focus on standardized conditions to obtain comparable results.

Investigation of the Effects of Monomeric and Dimeric Stilbenoids on Bacteria-Induced Cytokines and LPS-Induced ROS Formation in Bone Marrow-Derived Dendritic Cells

Peter Riber Johnsen, Cecilia Pinna, Luce Mattio, Mathilde Bech Strube, Mattia Di Nunzio, Stefania Iametti, Sabrina Dallavalle, Andrea Pinto, Hanne Frokiaer

Summary: This study compares the effects of seven different structural types of stilbenoids on the modulation of cytokine production and antioxidant response. Monomeric compounds showed dose-dependent inhibition of cytokine production induced by E. coli, with resveratrol and piceatannol also inhibiting IL-10 production. All monomers, except trimethoxy-resveratrol, inhibited cytokine production induced by L. acidophilus. However, the dimer dehydro-delta-viniferin remarkably enhanced IL-12 production induced by L. acidophilus.

Insight into the Sustainability of the Mediterranean Diet: The Water Footprint of the Recommended Italian Diet

Alessandra Bordoni

Summary: As we deal with climate change and scarcity of natural resources, the challenge is to provide sufficient, nutritious, safe, and affordable food for a growing global population without harming the environment. The water footprint (WF) is an important indicator of the environmental impact of diets, and this study evaluates the WF of the food patterns suggested by the Italian Food Based Dietary Guidelines for the first time. The results show that the suggested Italian dietary patterns have a low WF, but consumer choices and providing information to farmers and producers can further reduce water usage.

Docosahexaenoic Acid as Master Regulator of Cellular Antioxidant Defenses: A Systematic Review

Sara Margherita Borgonovi, Stefania Iametti, Mattia Di Nunzio

Summary: Docosahexaenoic acid (DHA) is a polyunsaturated fatty acid that shows potential in controlling cellular antioxidant defenses through Nrf2 activation. Studies in cell cultures and animals indicate positive effects of DHA on cellular antioxidant enzymes. However, variations in experimental conditions might account for the observed differences among studies.

Summary: Buckwheat is recognized as a good source of nutrients and is receiving increasing attention as a potential functional food. This study found that sprouting buckwheat for 48 and 72 hours increased the content of peptides and free-phenolic compounds, improved antioxidant activity, reduced anti-nutritional components, and improved the overall nutritional characteristics. These results confirm the potential of sprouted buckwheat as a high-quality ingredient for innovative products.

Toward Sustainable and Healthy Fish Products-The Role of Feeding and Preservation Techniques

Summary: Fish is an essential part of the human diet, with an increasing proportion expected to come from aquaculture production in the future. Sustainable growth in aquaculture requires the use of new raw materials while maintaining the nutritional value of fish meat. The study evaluated the impact of a newly formulated feed and preservation treatments on the composition and digestibility of sea bass fillets, finding that the formulated feed maintained good nutritional value and pulsed electric field (PEF) showed promise as a preservation technology.
