Summary: Water activities of CuCl2-MCl2-H2O (M=Mg, Ca) ternary systems and their sub-binary systems were measured at 298.15K, with results showing that the Reaction model successfully predicted the water activity and solubility in these systems. The Pitzer model and PSC model were found to be inconsistent in representing the thermodynamic properties of these systems. The study also demonstrated how the Reaction model accounted for the distribution of Cu-bearing species in relation to MgCl2 (CaCl2) molalities and the influence of electrolyte solution structure variation on macroproperties.

Summary: Density, viscosity, and ultrasonic speed of 2-chlorotoluene with methanol and ethanol binary mixtures were measured at various temperatures. The excess molar volume, deviation in viscosity, and deviation in ultrasonic speed were calculated based on the experimental data. The results showed negative excess molar volume values for the binary mixtures, but positive at higher concentrations of 2-chlorotoluene. The viscosity and ultrasonic speed deviations were positive throughout the composition range. Various correlations were analyzed to determine viscosity and ultrasonic speed values, and Nomoto's correlation was found to be highly predictive. The findings provide insights into molecular interactions and were further validated using the ab initio approach and Singh's viscosity model.

Summary: In this paper, the co-precipitation method was used to prepare NaMgF3 and MgF2 using the leaching solution of SPL and magnesium sulfate as raw materials. The molar ratio of magnesium ion to fluorion (M/F) was found to be the decisive factor for the type of product. NaMgF3 was mainly produced when M/F < 0.33, while MgF2 gradually formed when M/F increased to 0.33-0.81, and the product became a mixture of NaMgF3 and MgF2. When M/F exceeded 0.81, MgF2 was the main product.

Summary: This study analyzed and reported the variations in microstructure, diffusion of chloride ions, and chloride binding in concrete exposed to solutions containing MgSO4 and NaCl under wetting-drying cycles. The results showed that the amounts of ettringite, calcium hydroxide, gypsum, calcite, and calcium chloroaluminate varied with the depth of the concrete. The presence of MgSO4 reduced the amount of free chloride and apparent chloride diffusion coefficient due to the filling effect of ettringite. Concrete made with ordinary Portland cement exhibited higher chloride binding capacity compared to concrete made with fly ash and Portland pozzolana cement.

Summary: Pyrolytic kinetic and thermodynamic analyses of date seeds were conducted using TGA. The results showed that the pyrolysis process consists of three stages: dehydration, devolatilisation, and char formation. The kinetic evaluation was performed using the Coats-Redfern method, and the best-fit model was the Zhuravlev diffusion equation. The data obtained are valuable for understanding the pyrolysis mechanism of date seeds and can be used in the design of pyrolysis reactors.

Summary: This study investigated the physicochemical, rheological, and biological properties of an exopolysaccharide (EPS) produced by Enterococcus faecalis 84B strain. The EPS-84B had a high molecular weight, large particle size, and mainly consisted of arabinose and glucose. It displayed shear-thinning behavior, high melting point, and ideal viscoelastic properties. EPS-84B also showed strong antioxidant, antitumor, antidiabetic, and antimicrobial activities.

Summary: The study aimed to encapsulate probiotics in date pit beads and release them in the human intestine. The beads were formed using the gravitational dripping technique, and an in-vitro protocol was used to test the digested beads and release of viable probiotic cells. Optimal results were obtained when using a ratio of 0.10 g of date pit powder per 0.20 g of sodium alginate, resulting in viable probiotic cell counts of log10 5.8, 5.3, and 4.7 CFU/ml for Raziz, Naghal, and Khadrawy date varieties, respectively. Date pit powder showed excellent results in encapsulating probiotics and delivering them to the target organ. Moreover, the encapsulation technique effectively protected the survival of probiotics in the intestine.

Summary: The aim of this study was to assess the effects of ultrafiltration (UF) combined with high-pressure processing (HPP) or heat treatment on the quality of soft cheese produced from camel milk (CM) or bovine milk (BM). The results showed that UF combined with HPP at 550 MPa can increase the total solid content and gel structure of soft cheese. Compared with heat treatment, camel milk cheese is more susceptible to protein hydrolysis and has more low molecular weight bands.

Summary: This study investigated the physicochemical, bioactive, and rheological properties of an exopolysaccharide (EPS) secreted by Lactococcus lactis subsp. lactis C15. The EPS was found to have a polysaccharide structure and exhibited antioxidant, antiproliferative, and antibacterial activities. Furthermore, the rheological properties of the EPS were affected by pH and salt concentration. Overall, EPS-C15 shows promising potential for applications in various industries.

Arabic gum is an effective and safe antimicrobial and antioxidant additive in food, but its utility in the industrial encapsulation process is currently limited.
