Despite the vast literature describing the biological effects of phenolic compounds, rather scarce data are available on their absorption from diet in humans. The present study focused on the absorption in humans of phenolic acids from white wine, particularly hydroxycinnamic acids and their esters with tartaric acid. The results obtained indicate that, following a single wine drink, hydroxycinnamic acids from white wine are absorbed from the gastrointestinal tract and circulate in the blood after being largely metabolized to the form of glucuronide and sulfate conjugates. Unmodified tartaric acid esters of hydroxycinnamic acids from wine are present in human plasma at low levels, if any. Wine hydroxycinnamic acids, although present in wine as conjugated forms, are still bioavailable to humans.

Association between the indole pathway of tryptophan metabolism and subclinical depressive symptoms in obesity: a preliminary study

Ines Delgado, Sofia Cussotto, Andrea Anesi, Sandra Dexpert, Agnes Aubert, Bruno Aouizerate, Cedric Beau, Damien Forestier, Patrick Ledaguenel, Eric Magne, Fulvio Mattivi, Lucile Capuron

Summary: This study found that chronic low-grade inflammation in obesity played an important role in depressive symptoms. One mechanism involved the effects of inflammation on tryptophan metabolism. High levels of high-sensitive C-reactive protein and low levels of indole-3-carboxaldehyde were associated with more severe depressive symptoms.

Summary: Understanding the behavior of wine aroma compounds under different storage conditions is crucial for understanding the changes in their sensory characteristics during shelf life. This study developed a fast, modern, robust, and comprehensive protocol for quantifying volatile compounds in wine and applied it to study the behavior of different wines under different storage conditions. The results showed changes in the main compounds and an increase in unwanted compounds.

Impact of wheat aleurone on biomarkers of cardiovascular disease, gut microbiota and metabolites in adults with high body mass index: a double-blind, placebo-controlled, randomized clinical trial

Francesca Fava, Maria M. Ulaszewska, Matthias Scholz, Jan Stanstrup, Lorenzo Nissen, Fulvio Mattivi, Joan Vermeiren, Douwina Bosscher, Carlo Pedrolli, Kieran M. Tuohy

Summary: This study aimed to evaluate the effects of wheat aleurone supplemented foods on human health. The results showed that aleurone has the potential to modulate gut microbial metabolic output and increase the abundance of bifidobacteria in feces. However, it did not have a significant impact on plasma homocysteine or other cardiovascular disease biomarkers.

Summary: Free varietal thiols play a crucial role in the primary aroma of wines, particularly contributing to passion fruit and box tree/cat urine scents. Muller-Thurgau wines were found to have the highest levels of 4MSP and 3-SH, which are correlated with odor descriptors.

Branched-Chain and Aromatic Amino Acids Related to Visceral Adipose Tissue Impact Metabolic Health Risk Markers

Ximena Orozco-Ruiz, Andrea Anesi, Fulvio Mattivi, Monique M. B. Breteler

Summary: Visceral and subcutaneous adipose tissue function as endocrine organs and affect metabolic health through metabolite concentrations. This study found that certain metabolite concentrations associated with cardiometabolic risk markers are altered with increased visceral adipose tissue volume.

Summary: The modulation of host and dietary metabolites by gut microbiota is crucial for maintaining host physiology and understanding various pathologies. A new chromatography-mass spectrometry method was developed to quantitate 89 metabolites resulting from human-gut microbial cometabolism in plasma, serum, and urine. This method provides accurate and efficient measurement of metabolite concentrations in biological fluids, making it a valuable tool for studying changes in human-gut microbial cometabolism in health and disease.

Investigation of Brazilian grape juice metabolomic profile changes caused by methyl jasmonate pre-harvest treatment

Lais Moro, Renata Vieira da Mota, Eduardo Purgatto, Fulvio Mattivi, Panagiotis Arapitsas

Summary: This study investigated the impact of methyl jasmonate (MeJa) treatment on grape juice production in two Brazilian regions using two Vitis labrusca cultivars. The results showed that MeJa treatment significantly improved the anthocyanic profile of Isabel Precoce juices. Furthermore, the concentration of hydroxycinnamates, especially their glucosides, increased with MeJa treatment. New biomarkers of MeJa treatment were identified, indicating a possible positive effect on the antioxidant properties of grape juice.

Feed your microbes to deal with stress: a psychobiotic diet impacts microbial stability and perceived stress in a healthy adult population

Summary: This study investigated the impact of a psychobiotic diet on the microbial profile and mental health in a healthy population. The results showed that the psychobiotic diet reduced perceived stress and improved stress levels, although it only had subtle effects on microbial composition and function. In addition, higher adherence to the diet was associated with greater decreases in perceived stress.

Development of a Fully Automated Method HS-SPME-GC-MS/MS for the Determination of Odor-Active Carbonyls in Wines: a Green Approach to Improve Robustness and Productivity in the Oenological Analytical Chemistry

Maurizio Piergiovanni, Silvia Carlin, Cesare Lotti, Urska Vrhovsek, Fulvio Mattivi

Summary: The aim of this study was to optimize and validate a green, robust, and comprehensive method for the determination of volatile carbonyl compounds (VCCs) in wines. The method was successfully optimized and automated using HS-SPME-GC-MS/MS, and complied with the principles of green analytical chemistry. The study evaluated the performance of the method in terms of linearity, LOQs, repeatability, and recovery, and successfully applied it to determine the evolution of VCCs in white and red wines after accelerated aging. The results were in accordance with current models on carbonyl evolution in wine aging.

An Overview of Bioactive Phenolic Molecules and Antioxidant Properties of Beer: Emerging Trends

Mirella Nardini

Summary: This review focuses on the bioactive molecules of beer, particularly the composition of phenolic compounds and the antioxidant activity. The impact of adjuncts such as fruit, vegetables, herbs, and natural foods on the polyphenol content, antioxidant properties, and phenolic profile of beer is reviewed, along with emerging trends in brewing processes. Further studies are needed to identify and characterize the bioactive molecules in beer, as well as study their absorption and metabolic fate in humans.

Summary: In this study, thermal desorption in on-line solid phase extraction coupled with reversed phase liquid chromatography was proposed for the first time and proved to be effective for desorbing analytes retained by multiple interaction polymeric sorbents. The method was successfully applied to the targeted analysis of 34 human gut metabolites with diverse physicochemical properties. The thermally assisted desorption strategy outperformed conventional room temperature desorption strategies and provided negligible matrix effects and low method quantification limits in urine and serum.
