Summary: This study experimentally investigated and optimized the extraction of chitin from crab shells to obtain chitosan with a predefined deacetylation degree and molecular mass. By varying four parameters, including NaOH concentration, temperature, HCl concentration, and number of acidic treatments, the optimum operating conditions were determined. The results showed that a high deacetylation degree of chitosan can be achieved with 5% NaOH concentration and low temperatures, while high molecular mass chitosan can be obtained with a single step acidic treatment.

Summary: In this study, monofilaments were produced from the cell wall of Rhizopus delemar, a zygomycete fungus grown on bread waste. The monofilaments contained chitosan, chitin, and other carbohydrates, and showed significant antimicrobial activity against both Gram+ and Gram- bacteria. Furthermore, the monofilaments exhibited no cytotoxicity. These findings suggest that the fungal monofilaments could be utilized as sustainable biomedical textiles using abundant food waste.

Summary: Microplastic pollution in marine environments has become a major global concern. This study examined the microplastic pollution status of two regions in the northeastern Mediterranean Sea using deep-water rose shrimp. Microplastic particles were detected in all specimens, with higher occurrence and accumulation in the Samandag region. Polyethylene was identified as the most common polymer type. These results provide valuable insight into microplastic pollution across different trophic levels.

Summary: This study aimed to assess the quality traits and sensory profile of cooked rose shrimps treated with a phenolic extract derived from olive vegetation water. Results showed that shrimps treated with the phenolic extract exhibited significantly lower microbiological values and maintained freshness characteristics better in sensory analysis compared to other groups.

Summary: In this study, chitin and chitosan were used to provide an environment for calcium ion and phosphate ion, promoting the formation of HA crystallites. This hypothesis was supported by experiments, and the porous morphology after HA mineralization was observed. CH-CS-HA showed a high crystallinity index and a Young's modulus close to that of native bone.

Summary: The basidiomycete Ustilago maydis, a biotrophic fungus, possesses a family of chitin deacetylases (CDAs) with seven genes that play discrete and redundant roles in virulence and cell wall integrity. The study shows that different CDAs have specific functions in evading plant immune recognition and modifying chitin to chitosan. Surprisingly, the simultaneous inactivation of all seven genes is not tolerated, indicating the essential role of chitosan for the fungus's viability.

Summary: The composition of free amino acids in seafood products is important for their flavor and quality. In this study, the FAA profiles of deep-water rose shrimps packaged using different methods were analyzed. The results showed that sodium sulfite treatment and vacuum packaging can effectively reduce the FAA content, providing an alternative method to chemical additives for extending the shelf-life of seafood products.

Summary: Chitosan, derived from chitin, has strong antifungal activity and is biodegradable, biocompatible, and non-toxic. Chitosan nanoparticles can enhance its antifungal activity. Various parameters, such as molecular weight, degree of deacetylation, acetylation pattern, concentration, and protonation of chitosan, affect its antifungal activity and nanoparticle properties. Understanding these parameters is important for designing environmentally friendly plant protection strategies.
