Summary: This study developed a fermented smoothie using traditional chayote leaves and locally produced pineapple fruit with lactic acid bacteria strains. The fermentation process improved the pH, total soluble solids, color, total phenols, and carotenoid contents of the smoothies. In vitro digestion simulation showed that fermenting with L75 significantly increased the recovery of total phenols during the intestinal phase, with a higher bioavailability of soluble free substances compared to the control.

Summary: This study extracted two cell-wall polysaccharides, CP-1 and CP-2, from chayote and conducted a structural analysis. CP-1 was identified as galactan, while CP-2 was an anionic heteropolysaccharide. The excellent application characteristics of CP-1 and CP-2 were confirmed, suggesting that chayote cell-wall polysaccharides could be used as new polysaccharide materials.

Summary: Microencapsulation based on chitosan was developed for the fruit extract of cv. Perla negra as an administration vehicle, and it proved to be a potential vehicle for its therapeutic administration without affecting the antiproliferative activity of the extract. Empty microspheres made with chitosan also showed an antiproliferative effect, and those loaded with extract showed cellular inhibition without affecting lymphocytes. Chitosan does not interfere with the biological activity of the metabolites incorporated into the microspheres.

Summary: This study investigated the complex coacervation of chayote pectin (CP) and sodium caseinate (CAS) in aqueous solution, comparing its behavior with apple pectin as the control. The results showed that the phase behavior and interactions between CAS and CP were influenced by pH and mixing ratios. The formation of soluble or insoluble complexes depended on the pH value, with electrostatic attraction playing a role below CAS's isoelectric point and hydrogen bonding and hydrophobic interaction dominating above it. The complexes formed had good thermal properties, and the study laid a theoretical foundation for the application of CP in food processing.

This has not been widely reported in literature, and further experiments have demonstrated enhanced bioactivity of integrated proteins in the gellified nanovesicles compared to liquid form.

Summary: This study observed the growth habit of 'Tuershao' chayote root tuber and found that the tuber enlargement period lasts about 120 days, with different phases of early enlargement, rapid enlargement, and maturation. The starch content gradually increased during tuber development, and the activities of sucrose synthase and invertase were highest during the rapid expansion phase. The unique petal-like structure formed by the secondary phloem and secondary xylem facilitated tuber enlargement and starch accumulation.

Summary: This study investigated the molecular mechanism of chayote tuber formation through integrative analysis of metabolome and transcriptome profiles at different stages of tuber growth. The study revealed that genes and metabolites related to starch biosynthesis and galactose metabolism were upregulated during tuber bulking, while sugar transporter genes were highly expressed during tuber formation. The upregulation of auxin and ethylene precursors indicated the important roles of these hormones in tuber development and maturation. The study also identified a similar signaling pathway and active cell division during the initial stages of tuber formation in chayote as in potatoes.

Summary: This study aimed to investigate the loading of sildenafil citrate in three commercial transdermal vehicles using 3D full-thickness skin equivalent and compare the results with permeability experiments using porcine skin. The results showed that the results obtained using the 3D skin equivalent were comparable to those obtained using porcine skin, suggesting that the 3D skin model can be a valid alternative for ex-vivo skin absorption experiments.
