The effect of storage on nutritional, textural and sensory characteristics of creamy ricotta made from whey as well as cow's milk and goat's milk

The aim of this study was to develop a creamy ricotta using a mixture of goat and cow whey as the main ingredients, with the addition of whole goat and cow milk. The nutritional composition, texture and sensory characteristics of the ricotta cheese were evaluated over 14days of refrigerated storage. There was a decrease in protein and ash content and pH changes during the assessed storage periods. The instrumental texture profile indicated that the creamy ricotta was easily deformable, with minimal inelasticity and a cohesive, soft and delicate texture. The medium- and long-chain fatty acid content was higher than the short-chain fatty acid content. The flavour and aroma of creamy ricotta were described by the panel as having a soft texture and wet appearance. The use of whey from goat and cow cheese in making creamy ricotta is feasible and does not cause negative impact in the final product.

Summary: This study assessed the effects of a mixed formulation containing Limosilactobacillus (L.) fermentum on cardiometabolic parameters, inflammatory markers, short-chain fatty acid fecal contents, and oxidative stress in female rats fed a high-fat diet. The results showed that the formulation could increase beneficial fecal contents, reduce hyperlipidemia and hyperglycemia, improve antioxidant capacity, and decrease inflammation, thus preventing dyslipidemia, inflammation, and oxidative stress.

Malicia honey (Mimosa quadrivalvis L.) produced by the jandaira bee (Melipona subnitida D.) improves depressive-like behaviour, somatic, biochemical and inflammatory parameters of obese rats

Summary: The study aimed to evaluate the effects of malicia honey on somatic and biochemical parameters, depressive-like behaviour, and anti-inflammatory activity in obese rats. The results showed that malicia honey improved depressive-like behaviour, reduced weight and body mass index, and improved lipid profile, leptin, insulin, and glucose and insulin tolerance in obese rats. Additionally, malicia honey decreased NF-kappa B levels in the brain.

Summary: This study evaluated the effectiveness of citral nanoemulsion in reducing the survival of Listeria monocytogenes on fresh-cut melon and papaya. The results showed that citral nanoemulsion significantly decreased the bacterial counts and did not negatively affect the sensory parameters.

Summary: This study evaluated the effects of simulated gastrointestinal conditions on potentially probiotic Limosilactobacillus fermentum 296, quercetin, and resveratrol as bioactive components of novel nutraceuticals. The nutraceuticals demonstrated high plate counts and live cell subpopulations of L. fermentum 296 after exposure to gastrointestinal conditions. The nutraceuticals also maintained high contents and bioaccessibility of quercetin and resveratrol, as well as high antioxidant capacity during gastrointestinal exposure, potentially protecting L. fermentum 296 cells.

Summary: The effects of fermented umbu-caja and soursop pulps on the colonic microbiota of middle-aged hypertensive adults were evaluated. Fermented soursop pulp with I. terricola 129 showed the most pronounced effects by increasing the relative abundance of beneficial bacteria and reducing the abundance of harmful bacteria, along with the production of beneficial organic acids and phenolic compounds.

Influence of lactic acid bacteria metabolites on physical and chemical food properties

Summary: The development of healthy foods and beverages with minimal synthetic ingredient use has become a trend in the food industry, and products obtained by fermentation with lactic acid bacteria (LAB) have been highly accepted by consumers. LAB produces metabolites that can improve various parameters of fermented foods, including dairy, bakery, meat, fruit, and vegetables. These metabolites, such as H2O2, organic acids, fatty acids, amino acids, exopolysaccharides, bacteriocins, acetoin, and acetaldehyde, have been characterized as valuable tools to enhance the physical, chemical, sensory, and functional properties of foods and beverages. Further research on the metabolic pathways and characteristics of LAB should be conducted to optimize their use in the food industry.

Mandacaru fruit pulp (Cereus jamacaru DC) as an adjunct and its influence on Beer properties

Summary: This study investigated the influence of Mandacaru fruit pulp (MFP) as an adjunct on volatile and phenolic compounds, and antioxidant properties of Beer. The results showed that the addition of MFP can change the characteristics of volatile and phenolic compounds in beer, and enhance the antioxidant activity of beer. Different levels of MFP supplementation can increase ethanol and glycerol content, and enhance aroma formation in beer.

Quality of Brazilian stingless bee honeys: Cephalotrigona capitata/ mombuca?o and Melipona scutellaris Latrelle/uru?u

Summary: This study characterized the honeys produced by stingless bees Cephalotrigona capitata and Scutellaris Latrelle in the Caatinga and Atlantic Forest biomes in terms of their chemical composition, antioxidant activity, and phenolic, volatile, and sensory profile. The honey labeled as "Mombuca similar to o" showed higher water activity, acidity, sucrose content, and organic acids content, while the honey labeled as "urucu" showed the highest fructose and glucose content. Various phenolic compounds and flavonoids were quantified, with significant amounts of epicatechin gallate, myricetin, quercetin, and procyanidin A2. The honey labeled as "Mombuca similar to o" exhibited the highest antioxidant activity. 133 volatile compounds were identified in the honeys, with terpenes and esters being the most abundant. The honey labeled as "Mombuca similar to o" had a distinct sensory profile characterized by an acid and citrus aroma and flavor, while the honey labeled as "urucu" had a more typical sweet and woody aroma and flavor. The variation in honey composition was attributed to bee species, floral species, and geographic origins.

Influence of fat reduction and flavor addition on the temporal sensory profile in potato chips using a multiple-intake approach

Summary: This study investigated the effects of low fat content and ham flavor on the taste and texture of potato chips, as well as consumer acceptability and purchase intention. The results showed that low fat content significantly affected the texture attributes of potato chips, while the presence of ham flavor greatly modified the flavor sensations during consumption but had no effect on acceptability.

Extra virgin coconut oil (Cocos nucifera L.) intake shows neurobehavioural and intestinal health effects in obesity-induced rats

Summary: The present study evaluated the effect of E-VCO on neurobehavior and intestinal health parameters in obesity-induced rats. E-VCO reduced energy intake and body weight gain, showed antidepressant effect, increased lactic acid bacteria counts, modulated organic acids, and protected the hippocampus from neuronal degeneration. Furthermore, it decreased M1 macrophage and increased M2 macrophage population in the gut, improving gut health. These results suggest that E-VCO has promising effects against obesity-related comorbidities.

Summary: The effects of supplementation with acerola, cashew and guava processing by-products on retinol level, lipid profile, and intestinal function in rats were investigated. The results showed that these fruit by-products have bioactive compounds that promote health, with potential hypolipidemic effects and modulation of intestinal function. These findings have important implications for sustainable agriculture and future clinical studies.

Exploring the antimicrobial effects of a phenolic-rich extract from jabuticaba depulping waste against enterotoxigenic Escherichia coli

Summary: This study evaluated the effects of phenolic-rich extract from jabuticaba depulping waste on enterotoxigenic Escherichia coli (ETEC) strains. The extract exhibited antibacterial activity, reduced cell counts of ETEC, decreased biofilm formation and motility, increased antibiotic susceptibility, and impaired cellular functions of ETEC cells. These findings suggest that the extract could be a potential solution for preventing and treating ETEC infections.

The economic feasibility of the process is also evaluated.
