Summary: In this study, a new intracellular polysaccharide component called P. ostreatus polysaccharide (POP-W) was obtained from the mycelium of P. ostreatus and its structure was analyzed. The results showed that POP-W had a molecular weight of Mw = 3.034 x 103 kDa and did not contain protein and nucleic acid. POP-W showed good thermal stability and significant antioxidant activity, and it protected PC12 cells from H2O2-induced oxidative damage through the PI3K/Akt signaling pathway and regulation of apoptosis-related pathway proteins.

Summary: Consumers are increasingly interested in products with specific nutritional and health-promoting properties. Producers have responded to this demand by developing fortified foods. Mushrooms are one of the raw materials that can be used to enrich food. By isolating crude water soluble polysaccharides (cWSP) from oyster mushrooms, enriched milk yogurts can be produced. However, the addition of cWSP leads to changes in texture and taste, and increases the antioxidant capacity of the yogurt.

Summary: Crosslinking affects the mechanical behavior and tissue metabolism of collagen-based tissues. Aging and diabetes alter the crosslinking type and density, thus changing tissue properties. High-connectivity enzymatic crosslinking and advanced-glycation end-products result in uniform deformation under daily activity, while low-connectivity enzymatic crosslinking does not. High-connectivity model displays more sliding, while AGEs induce instability in structures near the binding sites.
