Summary: A study on fish consumption preferences in Kibera, Nairobi, Kenya found that Lake Victoria sardine was the most preferred fish species, followed by Nile tilapia and Nile perch. Household size and income level influenced preferences for different fish species, with larger households preferring sardines and higher-income households preferring Nile tilapia and Nile perch. Rising fish prices increased preference for Nile tilapia, while lower prices increased preference for Lake Victoria sardine.

Summary: The study utilized the Veggie Meter(R) device to measure skin carotenoids and assess fruit and vegetable consumption in a low-income school setting. Results from repeated measures analysis indicated a significant difference in skin carotenoids over the course of the study, showing an increase in fruit and vegetable consumption. By refining the protocol, the Veggie Meter(R) was proven to be a useful non-invasive tool for measuring dietary behavior change in a traditionally difficult-to-assess population.

Summary: A school meal program in Indonesia was implemented to address health issues caused by malnutrition among junior and senior high school students. The program included dietary and educational interventions, which led to significant improvements in nutrition and hygiene knowledge, attitude, and practice scores, as well as increased intake of protein, iron, and vitamin C. While there were no significant improvements in nutrition status, there was a significant reduction in anemia prevalence.

Summary: Promoting a healthy diet, particularly among young people, is the most effective measure to prevent dietary excesses and nutritional imbalance. MaestraNatura (MN) is an innovative nutritional education program aimed at promoting a healthy lifestyle in first-level secondary school students. This study evaluated the effectiveness of the MN program in improving knowledge in students. The results showed a significant improvement in knowledge in the MN group compared to the control group. Additionally, the students showed better performance in organizing weekly menu plans after completing the MN program.
