To quantitatively assess food texture changes and/or masticatory efficiency during chewing, the jaw movements and, chewing/biting forces must be measured. For this purpose, a robotic solution has been proposed to reproduce the human chewing behavior. The chewing robot of parallel mechanism is based on the biological finding that the mandible is pivoted at the temporomandibular joints and driven by groups of muscles for opening and closing of the mouth. This paper reviews the biomechanics of the mastication system, defines the kinematical mechanism of the chewing robot, and describes the design of the actuation systems. With a linear actuator for a muscle group of mastication, its spatial placement between the mandible or moving plate and the maxilla or ground plate follows the line of action and attachment sites of the muscle. The design requirements for each actuation system are mainly specified as the actuation range, velocity, and acceleration, and the actuation force, which are determined by inverse kinematics analysis via a simulation software and the jaw force analysis via Pythagorean theorem, respectively. A design of the physical linear actuation, which is made up of a rotary motor, a gear reduction train, and a leadscrew, is presented, whereas the challenges are discussed for building the entire chewing robot.

Label-Free Classification of Bacterial Extracellular Vesicles by Combining Nanoplasmonic Sensors With Machine Learning

Mohammadrahim Kazemzadeh, Colin L. Hisey, Priscila Dauros-Singorenko, Simon Swift, Kamran Zargar-Shoshtari, Weiliang Xu, Neil G. R. Broderick

Summary: Bacterial extracellular vesicles (EVs) are nano-scale lipid-enclosed packages that play important roles in various biological processes. This study demonstrates the potential of using surface-enhanced Raman spectroscopy (SERS) and machine learning algorithms to rapidly classify and characterize bacterial EVs, which is crucial for the development of their laboratory and clinical applications.

Summary: This study implements closed-loop methods for controlling gastric simulators for the first time, demonstrating the superiority of closed-loop techniques over open-loop approaches through experimental results. By using the RiSPA bellows-driven soft pneumatic actuator as the main actuation system, all technical aspects of implementing closed-loop control and sensor-actuator integration are discussed in detail.

Synergistically enhanced single-atomic site catalysts for clean energy conversion

Fa Yang, Weilin Xu

Summary: The development of cost-effective, high-performance catalysts at the atomic level is crucial for large-scale applications of renewable clean energy conversion. Single-atomic site catalysts (SACs) have great potential as next-generation materials, with the introduction and coupling of synergistic components to improve activity. Various atomic-coupling structures, including SAC-NPs, SACCs, DACs, and SAAs, offer unique synergistic effects that need further exploration and comparison.

A mechanistic approach to model the breakdown of solid food during chewing

Summary: Chewing food prepares it for safe swallowing by reducing particle size, exposing new surface, and blending it with saliva to benefit both digestion and the sensory experience of consumers. Feed technologists play a role in enhancing the outcomes of a multitude of rate processes, including particle size reduction through subsequent selection and breakage in each chewing cycle.

Prediction of the effect of water on the glass transition temperature of low molecular weight and polysaccharide mixtures

Sebastian Linnenkugel, Anthony H. J. Paterson, Lee M. Huffman, John E. Bronlund

Summary: The right storage conditions for food powders containing amorphous carbohydrates are crucial to avoid structural changes. This study combines sorption isotherm and glass transition temperature (Tg) data to predict the stability of food powders. The results demonstrate the effectiveness of the method in predicting the relation between Tg and water activity for carbohydrate mixtures.

Unraveling the Potential-Dependent Volcanic Selectivity Changes of an Atomically Dispersed Ni Catalyst During CO2 Reduction

Summary: Potential-dependent selectivity changes are widely observed in electrocatalysis, but a detailed understanding of these changes at an atomic level is still lacking. In this study, we use a model atomically dispersed nickel catalyst to obtain a comprehensive view of potential-induced structure changes during the CO2 reduction reaction. Our findings show that the catalyst exhibits volcano-like selectivity changes that are dependent on the distance between the nickel atom and the carbon basal plane. Theoretical calculations suggest that local dynamic behaviors play a crucial role in regulating the distribution of the d band center of nickel.

Classification of Preeclamptic Placental Extracellular Vesicles Using Femtosecond Laser Fabricated Nanoplasmonic Sensors

Summary: Placental extracellular vesicles (EVs) play important roles in pregnancy, but they are also implicated in the progression of preeclampsia. A fabrication process called laser-induced nano-structuring of SERS-active thin films (LINST) was developed to produce substrates that allow the biochemical fingerprinting of EVs. The findings encourage the exploration of surface-enhanced Raman spectroscopy (SERS) of EVs as a promising method for preeclampsia liquid biopsies.

Cascaded Deep Convolutional Neural Networks as Improved Methods of Preprocessing Raman Spectroscopy Data

Summary: Machine learning has significantly impacted the value of spectroscopic characterization tools, especially in biomedical applications. However, the extensive data preprocessing required often introduces bias. To address this, researchers developed two deep learning methods capable of fully preprocessing spectroscopy data without human input. The findings suggest that these methods outperform conventional approaches in terms of speed, defect tolerance, and classification accuracy.

Summary: This study presents the design and implementation of a novel robotic soft esophagus (RoSEv2.0) for esophageal stent testing and food viscosity studies. The RoSEv2.0 is equipped with embedded time of flight (TOF) and pressure sensors for modeling and control. Model predictive control (MPC) using SINDYC models was implemented to autonomously govern peristalsis and air pressure. Successful generation of peristalsis waves and migration testing of stents were achieved.
